DIY Fried Chicken? Abuela’s got you covered:
Ingredients for Fried Chicken:
- 4 pounds of chicken (in small pieces)
- 1 cup buttermilk
- 2 cups all-purpose flour for coating
- 1 teaspoon paprika
- salt and pepper to taste
- 2 quarts vegetable oil for frying
Directions for Making fried chicken:
- Skin the cut-up pieces of chicken if you want. Place the flour in a large plastic bag. Add salt, pepper, and paprika to taste, to the flour (paprika helps the chicken brown).
- Butter-milk the chicken pieces then place a few at a time in flour bags, seal the bags, and shake until well coated.
- On a cookie sheet or tray, place the coated chicken and cover it with a clean dish towel or waxed paper. THE FLOUR MUST BE OF A PASTE-LIKE CONSISTENCY. THIS IS VERY IMPORTANT!
- Put about 1/3 to 1/2 cup of vegetable oil in a large skillet (cast iron is best). Put in as many chicken pieces as the skillet can hold.
- Heat to a very high temperature. Brown the chicken in HOT oil on both sides. When browned, reduce heat and cover the skillet; let cook for 30 minutes (the chicken will be cooked through but not crispy). Remove cover, raise heat again and continue to fry until crispy.
- Drain the fried chicken on paper towels. Depending on how much chicken you have, you may have to fry in a few shifts.
- Keep the finished chicken in a slightly warm oven while preparing the rest.
Cane Syrup:
Ingredients for Cane Syrup
- 8oz brick of cane sugar
- 1 cup of Water
Directions:
- Cut brick into pieces.
- Add water to the pot (medium-high heat)
- Add sugar pieces and stir until dissolved (7-10 minutes)
Stuffing the Arepas:
- Grab Arepa and cut it in half
- Spread Butter onto inside of arepas
- Add the fried Chicken (cut into strips)
- Add Shredded White Cheese (Mozzarella is a good substitute)
- Drizzle Cane Syrup inside arepa.
- Enjoy!
