Slow Cooker Mojo Pork Stuffing

Things you need:

  • Dulce Arepas
  • Mojo Pork

Dulce Arepas:

Ingredients For Sweet Arepas (Makes 8):

  • 2 cups of water (Pro Tip #1: Have an extra small bowl on the side to dip hands in when handling dough)
  • 2 Cups of Abuela's DulceArepa Mix (Order Here) OR try making your own by mixing the following ingredients:
    • 2 cups of precooked white cornmeal
    • 3 tbsp Cane sugar
    • 1 tsp Anise Seeds 
    • ½ tsp Salt

Directions for Making Arepas:

  1. Pour Water into the mixing bowl
  2. Add Abuela's Mix or Home Made Mix to water and mix with hands
  3. Form dough into a  big ball and let sit for 5 minutes
  4. Dip your fingers into a bowl of water and grab a handful of dough to roll into smaller balls(about the size of a ping-pong ball). Then press into the palm of your hands to form an arepa patty (about 3.5” in. wide).
  5. Pro Tip #2: If the edges crack easily, apply water on the edges with your fingertips.
  6. Once the patty is formed, proceed to fry at high-medium heat (at 330-350F) or air fry (instructions link)

Mojo Pork:

Ingredients for Mojo Pork:

MARINADE

  • 3/4 cup extra virgin olive oil
  • 1 cup cilantro/coriander, lightly packed
  • 1 tbsp orange zest
  • 3/4 cup orange juice, fresh
  • 1/2 cup lime juice
  • 8 garlic cloves
  • 1 tbsp fresh oregano leaves, packed (or 1/2 tbsp dried oregano)
  • 2 tsp ground cumin
  • 1 tsp salt
  • 1 tsp black pepper

PORK

  • 4 lb / 2 kg pork shoulder/pork butt, skinless and boneless (not loin or leg roast, will dry out)

MOJO SAUCE

  • 2 tbsp lime juice
  • 1/4 cup orange juice
  • Salt and pepper

Cooking instructions for Mojo Pork:

  1. Grab a large pot, layer it with canola oil, and turn on the heat to high-medium.
  2. Season pork with salt and pepper. Put the pork in a large pot and brown the pork on all sides.
  3. Combine orange and lime juice, oregano, red pepper flakes, garlic, cumin and bay leaves inside the slow cooker.
  4. Add pork to slow cooker and baste in mixture until it is well covered.
  5. Cook on low for 8 hours or on high for 6 hours.
  6. When the pork is finished, serve with the juice from the cooker on top.

Stuffing Arepas:

  1. Grab Arepa and cut it in half
  2. Spread Butter onto the inside of the arepas
  3. Add Pork 
  4. Add Shredded White Cheese (Mozzarella is a good substitute)
  5. Close Arepa and Enjoy with your friends and family
